Gingerbread Pinwheel Cookies

Slice-and-bake gingerbread pinwheel cookies with a clear golden molasses and pale vanilla spiral.

Separate vanilla and gingerbread doughs form the two colors in each spiral. Roll them into matching rectangles, stack them, then use the parchment to guide a snug log. Firm logs and an even slice thickness keep the spiral clear through baking.

YieldAbout 60 pinwheel cookies

Per tray: 15–20 minutes · 3–4 trays of about 15–20 cookies on 13 × 18-inch pans

Allow 225 minutes: 45 hands-on, 100 chilling, 60 for all baking trays, 20 cooling. Cooling includes the pan rest. Optional decoration, ingredient warm-up and extra trays add time.

Ingredients

Gingerbread layer

Vanilla layer

Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.

Instructions

Make gingerbread dough

  1. Beat gingerbread-layer butter, brown sugar and molasses until smooth. Mix in yolks. Whisk that layer flour with spices, soda and salt; mix into butter until combined.

Make vanilla dough

  1. In a clean bowl beat vanilla-layer butter and sugar, then add its egg and vanilla. Whisk that layer flour, soda and salt and mix just until dough forms.

Firm both layers

  1. Wrap doughs separately as flat rectangles and refrigerate 1 hour. Roll each between lightly floured parchment into a 12 × 15-inch rectangle. Chill the rolled layers another 10 minutes.

Stack and roll two logs

  1. Invert gingerbread onto vanilla, align edges and peel off the top parchment. Cut the stack lengthwise into two 6 × 15-inch rectangles. Starting along a 15-inch edge, use parchment to roll each into a tight 15-inch log. If it cracks, soften briefly before rolling. Wrap and freeze 30 minutes until firm enough to slice.

Slice visible spirals

  1. Heat to 325°F (165°C) conventional or 300°F (150°C) fan. Use a sharp, smooth-bladed knife to slice each firm log into 1/2-inch rounds, about 30 per log. Place 1 inch apart on lined pans. Bake 15–20 minutes until edges begin to color; keep waiting logs cold.

Lift after setting

  1. Rest 5 minutes on the pan, then cool 15 minutes on a rack. The two-color spiral needs no icing.

Chef’s Science & Pro Tips

Match rectangle sizes

Equal outer dimensions make an even spiral despite differing layer thickness.

Roll while pliable

Cold brittle layers crack; warm layers smear. Soften briefly if needed.

Slice firm logs

Use a sharp knife and rotate the log occasionally to preserve round slices.

Notes

  • Two separately mixed doughs create the molasses-and-vanilla spiral. Do not add liquid molasses to half a finished vanilla dough. Yield varies with trimming and slice thickness.

Frequently Asked Questions

Why does the spiral crack?

The layers are too cold to bend. Soften briefly, then roll with parchment supporting them.

Can I skip the freezer rest?

The firm log is important for clean slices. A refrigerator can firm it instead but takes longer.

Do these need icing?

No. The gingerbread-and-vanilla swirl supplies their decorative finish.
