Apple Butter Gingerbread Cookies

Gingerbread thumbprints filled with smooth amber apple butter, pairing a molasses cookie with concentrated apple-cinnamon flavor.

A shallow well gives the apple filling room to sit without breaking through the bottom of each cookie.

If the apple butter runs off a spoon, simmer it briefly and cool it before filling the baked centers.

Coating

Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.

Instructions

Cream and combine

  1. Beat butter and both sugars for 2 minutes. Mix in molasses, then egg and vanilla; scrape the bowl. Whisk flour, soda, salt and spices separately, then mix into the wet ingredients just until combined.

Firm the dough

  1. Cover and refrigerate for at least 1 hour. If chilled longer than 2 hours, let stand about 20–30 minutes until scoopable; keep it cool rather than greasy.

Portion evenly

  1. Heat to 350°F (175°C) conventional, or 320°F fan. Line pans. Divide dough into 32 portions, about 26 g each. Roll into balls and coat with sugar. Space 3 inches apart. Press a shallow center with the rounded back of a 1/2-teaspoon measuring spoon.

Check the centers

  1. Bake on the center rack for 11–12 minutes. The edges should be set and tops cracked, with soft centers that are no longer glossy-wet. Use a cool pan for each new batch.

Let the structure set

  1. Gently reopen wells with a rounded measuring spoon while cookies are warm. Cool 5 minutes on the pan and 20 on a rack. Add about 1 teaspoon thick prepared apple butter to each cold center. The filling should hold in the well, not flow over the edges.

Chef’s Science & Pro Tips

Use concentrated apple butter

Loose applesauce contains more water and can soften the cookie around the well.

Reopen gently

Use thick apple butter so the filling holds in the well. If yours is loose, simmer it gently for 3–4 minutes, stirring, then cool completely before filling.

Fill close to serving

Apple filling slowly softens the cookie; fill cooled thumbprints close to serving for a sharper contrast.

Notes

  • Apple butter is a concentrated smooth apple spread, not dairy butter or loose applesauce. It is used as a filling after baking rather than added to the dough. Follow the apple butter label for refrigeration once opened; filled cookies are best served soon.
