Gingerbread Cookies Without Butter

Butter-free gingerbread crescents made with plant-based baking sticks, molasses and a flaxseed binder.

Firm plant-based baking sticks and a ground-flax gel form this dairy-butter-free dough. Let the flax hydrate before mixing and keep the shaped crescents cool. Broad, rounded tips are easier to lift and less likely to overbrown before the center is set.

Yield32 butter-free gingerbread crescents

Per tray: 8–10 minutes · 3 trays of 10–11 three-inch crescents

Allow 145 minutes: 35 hands-on, 60 chilling, 30 for all baking trays, 20 cooling. Cooling includes the pan rest. Optional decoration, ingredient warm-up and extra trays add time.

Ingredients

Flax egg

Cookie dough

Spice blend

Scale ingredients and US equivalents. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time.

Instructions

Build the dough

  1. Mix flaxseed with water and let thicken for 5 minutes. Whisk flour, soda, salt and spices. Cream vegan butter with brown sugar, then mix in flax gel, molasses and vanilla. Add dry ingredients on low; gently press together any crumbs.

Rest the dough

  1. Wrap two flattened dough portions and chill at least 60 minutes until cool and workable.

Portion consistently

  1. Heat to 350°F (175°C) conventional or 325°F (165°C) fan. Roll cold dough 1/4 inch thick. Cut broad 3-inch crescents, with rounded rather than needle-thin tips. Space 1 inch apart on lined pans.

Watch for doneness

  1. Bake one tray on the center rack for 8–10 minutes. Look for set edges and a dry-looking surface; soft cookie centers firm as they cool. Check early with fan and cool pans before refilling.

Set before moving

  1. Rest 5 minutes on the pan, then move gently to a rack for about 15 minutes or until fully cool. Optional prepared icing is additional; let it set before layering.

Chef’s Science & Pro Tips

Choose firm baking sticks

Low-fat tub spreads contain more water and can change spreading.

Use ground flax

Ground seed and water form a gel; whole seeds do not bind the same way.

Keep crescent tips broad

Thin tips can overbrown before the wider middle sets.

Storage and make-ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperatureUp to 5 daysStore fully cooled cookies airtight in a cool, dry place. Let icing dry, then separate layers with parchment; follow any icing storage instructions.
RefrigerationDough: up to 48 hoursKeep dough tightly wrapped. Let it soften just enough to roll while remaining cool. Plain baked cookies do not need refrigeration.
Raw freezingUp to 2 months at 0°F (−18°C)Wrap flattened dough portions tightly, then bag. Thaw overnight in the refrigerator and roll while cool.
Baked freezingUp to 2 months at 0°F (−18°C)For best appearance, freeze undecorated, cooled cookies airtight. Thaw covered at room temperature before icing.
RestoringBefore decoratingFor crisper edges, warm plain cookies at 300°F (150°C) conventional for 3–5 minutes. Cool on a rack. Do not reheat iced cookies.

Notes

  • Uses approximately 80%-fat plant-based baking sticks instead of dairy butter and a ground-flax binder instead of egg. It is not a direct liquid-oil substitution. Check the baking sticks for milk ingredients and choose vegan sugar if needed. Serve plain as pictured. Contains wheat.

Frequently Asked Questions

Can I pour in oil instead of baking sticks?

No. This formula uses solid plant-based sticks; liquid oil changes the dough.

Is there egg in the dough?

No. Ground flaxseed and water provide the binder.

Why are the crescent tips dark?

Very thin tips bake quickly. Use a broad cutter and check at the early end of the bake range.
