Gingerbread Cookie Cups Recipe
Per tray: 8–10 minutes · 2 batches in a 12-cup standard muffin pan
Allow 85 minutes: 35 hands-on, 0 chilling, 20 for all baking trays, 30 cooling. Cooling includes the pan rest. Optional decoration, ingredient warm-up and extra trays add time.
Kitchen tools you’ll need
- Two 12-cup standard muffin pans, about 2 3/4-inch top openings; bake 12 cups, then 8
- Electric mixer and bowl
- 2-tablespoon cookie scoop
- Rounded measuring tablespoon
- US cups/spoons and kitchen scale
- Cooling rack and piping bag with star tip
Ingredients
Cookie dough
Spice blend
Vanilla buttercream
Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.
Instructions
Build the dough
- Whisk flour, soda, salt and spices. Beat softened butter with brown sugar 2–3 minutes until creamy. Add egg and molasses. Mix in the dry ingredients only until combined.
Prepare the pan
- Heat to 350°F (175°C) conventional, or 325°F fan. Grease the standard muffin wells well. No scheduled chilling is needed; if the dough is unusually sticky, cool briefly until easy to portion.
Make the cup walls
- Divide into 20 portions, about 37 g or 2 tablespoons each. Press into the bottom and halfway up each well, leaving an indentation. Fill 12 wells in the first pan and 8 in the second; bake one pan at a time.
Bake and reinforce
- Bake 8–10 minutes until edges set and begin to color. Immediately press a deeper well with the rounded back of a tablespoon if needed, keeping a cookie base beneath it. Cool 10 minutes in the pan, then lift carefully and cool another 20 minutes on a rack. Cool the pan before baking the second batch.
Make and pipe the vanilla buttercream
- Beat softened butter until creamy. Add sifted confectioners sugar and vanilla on low, then beat smooth. Add milk a teaspoon at a time, using up to 1 tablespoon only as needed for a thick pipeable frosting. Pipe or spoon into cold cups. Optional ready-made mini gingerbread cookies and sprinkles can decorate the tops, as in the photo; they are additional.
Chef’s Science & Pro Tips
Press the cavity while warm
Restore the well with a rounded spoon just after baking, leaving a cookie base beneath it.
Keep buttercream thick
Add milk gradually; a loose filling does not hold neatly inside the cup.
Decorate after filling
Add optional mini cookie toppers shortly before serving so they remain crisp.
Storage and make-ahead
| Method | How long | What to do |
|---|---|---|
| Room temperature | Up to 2 days in a cool room | Keep buttercream-filled cups airtight in a cool room; refrigerate if the room is warm. |

| Restoring | Before serving | Let refrigerated filled cups stand 10–15 minutes; do not heat the frosting. |

Frequently Asked Questions
Are these filled with cheesecake?
No. This version uses vanilla buttercream. The separate Cheesecake-Filled recipe uses cream cheese.
Do I need mini gingerbread toppers?
No. They are optional decoration, additional to the cup recipe and timing.
Why did the cups break when I removed them?
Grease the wells well and let the cups rest 10 minutes before lifting; hot walls are fragile.
