Caramel-Stuffed Gingerbread Cookies

Large caramel-stuffed gingerbread cookies with a sugar crust and an enclosed chewy caramel center.

Flatten and freeze the soft caramel pieces first so each center is easy to wrap inside its dough portion.

Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.

Instructions

Firm the centers

  1. Unwrap 13 soft chewy caramel candies, about 8 g each. Trim or flatten to fit inside a dough disk. Do not use hard candy or pourable caramel sauce; freezing the candy is not required.

Make the spiced dough

  1. Whisk the three flours, soda, salt and dry spices. Rub fresh ginger into both dough sugars, then whisk in lukewarm melted butter, molasses and egg. Stir in dry ingredients just until combined.

Firm the dough

  1. Cover and refrigerate the dough at least 30 minutes until workable. If chilled much longer, let it soften only until it can be shaped while remaining cool.

Seal every center

  1. Heat to 375°F (190°C) conventional, or 350°F fan. Divide dough into 26 equal pieces, about 25–26 g each. Flatten two pieces, place a soft caramel candy between them and pinch the edges firmly shut. Roll into one ball, ensuring no filling shows. Coat in the mixed sugars and place 2 1/2–3 inches apart on lined pans.

Set the edges

  1. Bake one tray at a time 9–11 minutes until puffed, starting to crack and set around the edges. Centers remain tender. Use a cool pan for the next tray.

Let the filling settle

  1. Rest 5 minutes on the pan, then cool on a rack about 15 minutes. Filling is very hot straight from the oven; let it cool before taking a bite.

Chef’s Science & Pro Tips

Choose chewy caramel

Hard caramels stay difficult to bite; thin sauce escapes more easily. Use soft chewy squares.

Seal the dough

Keep caramel entirely enclosed with dough of even thickness on all sides.

Let centers cool

The caramel is much hotter than the outer cookie just after baking. Allow the pan and rack cooling.

Notes

  • Soft chewy caramel candy makes an enclosed center. Its texture firms as it cools and varies by brand. Coating nutrition conservatively includes the full measured allowance, even though some remains.

Frequently Asked Questions

Can I use caramel sauce inside?

No. It is too thin and can leak. Use soft chewy caramel candy.

Why did caramel escape?

A gap in the seal or very thin dough around the center can open as the cookie spreads.

Why is the center firmer the next day?

Chewy caramel firms as it cools. Brief gentle warming can soften it, but check carefully because it heats quickly.
