Dough

Finishing and decoration

Gram weights are the reference; weigh flour rather than packing the measuring cup. Weigh eggs without shells. Use commercially prepared fillings; do not taste raw dough.

Instructions

Prepare the pans and oven

  1. Arrange racks in the upper and lower thirds. Heat a conventional oven to 350°F (177°C). Line two rimmed baking sheets with parchment. Weigh all ingredients before mixing.

Mix the dough

  1. If ground flaxseed and water are listed, stir them together and let stand 10 minutes to thicken. Whisk the flour, baking soda, salt and any listed cocoa or ground spices. In a second bowl beat the listed fat and sugar until creamy, about 2 minutes. Beat in each egg or flax mixture, plus listed extracts, syrup, food coloring or other wet ingredients, scraping the bowl once. Add the dry mix and stir only until no flour remains, then fold in every listed chip, candy, fruit and nut.

Chill and portion

  1. Cover the dough and refrigerate for 45 minutes. Divide into 24 equal portions of about 25 g each. Roll each portion into a ball, unless the recipe’s shaping step gives another form. Leave 5 cm (2 inches) between portions on the lined trays.

Bake

  1. Bake one tray at a time in the center of the oven at 350°F (177°C) for 10–12 minutes. Rotate once halfway through. The edges should be set and lightly colored while the center remains slightly soft; shortbread should stay pale.

Cool and finish

  1. Rest cookies on the baking sheet for 8 minutes, then move to a rack and cool at least 25 minutes. Let cookies cool completely before adding any separately listed finish or packing them.

Glaze the iced molasses cookies

  1. Whisk the measured powdered sugar with the measured milk until thick but dippable. Dip the top of each completely cooled cookie, allow excess to drip off and let the glaze dry on a rack for 30 minutes.

Chef’s Science & Pro Tips

Portion evenly

Use the listed piece weight so the batch bakes at a similar rate; leave the stated space for spreading.

Check doneness

Use the visual cues in the method and let the cookies firm on the hot tray before moving them.

Make ahead

Freeze unfilled dough or plain baked cookies for up to one month for best quality; finish after thawing.
