Freezer-Friendly Christmas Cookie Dough

Freeze dough before adding sugar coatings, jam, glaze or marshmallows. For the recipes in this collection, plan on up to one month of freezer storage for quality; individual recipe instructions take precedence.

1. Portion and label

Mix the dough and complete its initial rest. Portion drop cookies into the weights listed in their recipe, or shape slice-and-bake dough into logs. Write the recipe name, preparation date, portion weight, oven temperature and baking interval on the freezer bag.

2. Wrap for the shape

Freeze scooped portions in a single layer on a lined tray until firm, then transfer to an airtight freezer bag. Wrap logs tightly in food-safe wrap, followed by a freezer bag. A split cardboard tube outside the wrapping can support a round log; the cardboard should not touch the dough.

3. Thaw in the refrigerator

Keep the dough wrapped and thaw overnight at 40°F (4°C) or colder. Slice logs when a sharp knife passes through without excessive force. Do not thaw egg-containing dough on the counter for hours or taste raw dough.

4. Finish just before baking

  • Crinkles: apply granulated sugar, then powdered sugar, after thawing and immediately before baking.
  • Thumbprints: shape or reopen the wells, bake the shells, and add the filling at the point specified in the recipe.
  • Snowballs: bake plain, then apply the first powdered-sugar coating while warm and the second when cold.
  • Pinwheels and slice-and-bake cookies: slice the thawed, still-firm logs evenly and bake on cool trays.

5. Use the recipe cues

Follow the listed oven temperature and baking range after thawing. A colder batch may need a little longer; check edges, bases and centers instead of adding a fixed time to every recipe.

Pack only cold cookies

Moisture trapped by warm cookies softens crisp ones. Separate peppermint and strong spice flavors from mild butter cookies; pack powdered-sugar finishes in paper cups. Cream, curd and ganache fillings need the refrigerated storage specified on their recipe pages. Freezing does not make a refrigerated filling suitable for unrefrigerated shipping.
