Ingredients

Dough

Cinnamon buttercream filling

Gram weights are the reference; weigh flour rather than packing the measuring cup. Weigh eggs without shells. Use commercially prepared fillings; do not taste raw dough.

Instructions

Prepare the pans and oven

  1. Arrange racks in the upper and lower thirds. Heat a conventional oven to 350°F (177°C). Line two rimmed baking sheets with parchment. Weigh all ingredients before mixing.

Mix the dough

  1. If ground flaxseed and water are listed, stir them together and let stand 10 minutes to thicken. Whisk the flour, baking soda, salt and any listed cocoa or ground spices. In a second bowl beat the listed fat and sugar until creamy, about 2 minutes. Beat in each egg or flax mixture, plus listed extracts, syrup, food coloring or other wet ingredients, scraping the bowl once. Add the dry mix and stir only until no flour remains, then fold in every listed chip, candy, fruit and nut.

Chill and portion

  1. Cover and refrigerate the dough for 45 minutes. Divide it into 24 equal pieces of about 25 g each and roll smooth. Arrange with 5 cm (2 inches) between pieces; do not fill before baking because these are sandwich cookies.

Bake

  1. Bake one tray at a time in the center of the oven at 350°F (177°C) for 10–12 minutes. Rotate once halfway through. The edges should be set and lightly colored while the center remains slightly soft; shortbread should stay pale.

Cool and finish

  1. Cool the cookie halves completely. Beat the measured butter, powdered sugar, vanilla, cinnamon and milk for 2 minutes until smooth. Pipe or spread about 18 g filling onto 12 cookies, then top with the remaining 12 cookies.

Chef’s Science & Pro Tips

Portion evenly

Use the listed piece weight so the batch bakes at a similar rate; leave the stated space for spreading.

Check doneness

Use the visual cues in the method and let the cookies firm on the hot tray before moving them.
