Makes 24 cookies. Portion at the weights in the method and bake on cool lined trays.

Allow about 154 minutes total: 30 active, 60 chilling, 24 baking and 40 cooling/setting. Baking time covers every tray in this batch.

Ingredients

Dough

Gram weights are the reference; weigh flour rather than packing the measuring cup. Weigh eggs without shells. Use commercially prepared fillings; do not taste raw dough.

Instructions

Prepare the pans and oven

  1. Arrange racks in the upper and lower thirds. Heat a conventional oven to 350°F (177°C). Line two rimmed baking sheets with parchment. Weigh all ingredients before mixing.

Mix the dough

  1. Beat the listed fat and sugar just until smooth, about 90 seconds; do not whip until fluffy. Add any egg, flax mixture, extract, syrup or other wet ingredient that appears in this ingredient list and mix until combined. Whisk the flour, salt and dry additions separately; add to the fat in two additions. Fold in listed fruit, nuts or chocolate only until evenly distributed.

Roll and cut

  1. Divide the chilled dough in half. Tint one half red. Roll both halves between parchment into equal 5 mm thick rectangles; stack, roll tightly from the long edge into one log, wrap and chill until firm. Slice into 24 rounds about 6 mm thick.

Chill and portion

  1. Cover the dough and refrigerate for 60 minutes. Divide into 24 equal portions of about 25 g each. Roll each portion into a ball, unless the recipe’s shaping step gives another form. Leave 5 cm (2 inches) between portions on the lined trays.

Bake

  1. Bake one tray at a time in the center of the oven at 350°F (177°C) for 9–11 minutes. Rotate once halfway through. The edges should be set and lightly colored while the center remains slightly soft; shortbread should stay pale.

Cool and finish

  1. Rest cookies on the baking sheet for 8 minutes, then move to a rack and cool at least 25 minutes. Let cookies cool completely before adding any separately listed finish or packing them.

Bake the pinwheels

  1. Bake one tray at a time at 350°F (177°C) for 9–11 minutes, until the edges are set. Cool 8 minutes on the tray, then move to a rack.

Chef’s Science & Pro Tips

Portion evenly

Use the listed piece weight so the batch bakes at a similar rate; leave the stated space for spreading.

Check doneness

Use the visual cues in the method and let the cookies firm on the hot tray before moving them.

Make ahead

Freeze unfilled dough or plain baked cookies for up to one month for best quality; finish after thawing.
