Soft Vegan Gingerbread Cookies

A little spice. A little Christmas magic.

Soft vegan gingerbread drop cookies with a fine sugar crust, gentle cracks and tender molasses centers, made without eggs or a flax egg.

The flour, molasses and plant-fat proportions are designed without one.

This egg-free drop-cookie dough needs neither a flax egg nor a scheduled chill. Use firm plant-based baking sticks rather than low-fat tub spread. The sugar estimate includes the full 75 g coating supply, though some may remain. Contains wheat; verify plant-fat and sugar labels for your vegan preferences.

Chef’s Science & Pro Tips

Do not add an egg replacer

The flour, molasses and plant-fat proportions are designed without one.

Stop at the first cracks

Waiting for firm hot centers produces a crisp rather than soft cookie.

Use cool baking sheets

A hot pan melts the plant fat before the dough can set and increases spread.
