Gingerbread Bell Cookies

A little spice. A little Christmas magic.

Gingerbread bell cut-out cookies with a clear Christmas silhouette and fine white icing details.

Use a broad spatula to move cut-outs without stretching the outline.

The bell design is an eating-sized cut-out rather than a structural piece. Keep a flared base and broad handle so fragile edges do not overbrown or break. Prepared white decorating icing is included; packing requires it to be fully dry.

Instructions

A · Prepare & mix

  1. Melt & seasonGently melt butter over low heat. Remove from the heat and stir in sugar, molasses, salt and spices until evenly combined. Let cool until lukewarm before beating in the egg.
  2. CombineWhisk flour with baking powder and baking soda, then mix into the wet ingredients until no dry flour remains. Dough will be sticky; do not add more flour.

B · Chill

  1. Firm the doughDivide into two flattened rectangles, wrap tightly and refrigerate at least 60 minutes, until cold and firm enough to roll. Chilling firms the butter and lets the flour hydrate.

C · Roll & cut

  1. ShapeHeat to 350°F (175°C) conventional or 325°F (165°C) fan. Roll cold dough 1/4 inch thick. Cut shapes with a 3-inch bell cutter, choosing a flared base and broad handle. Lift with a wide spatula and space 1 inch apart on lined pans.

D · Bake

  1. Check donenessPlace on parchment-lined pans about 1 inch (2.5 cm) apart. Bake one tray at a time for 8–12 minutes. Check at 8 minutes, especially with fan: edges should darken slightly and surfaces look set. Smaller shapes finish sooner.

E · Cool & finish

  1. Cool before icingRest 5 minutes on the pan, then cool about 15 minutes on a rack until fully cold.

Decorate

  1. Emphasize the silhouettePipe a bell outline and a tiny clapper on the cold cookies. Divide the measured icing among them. Leave flat about 1 hour or until dry following icing directions; thick lines and humidity may require longer.

Chef’s Science & Pro Tips

Support the whole shape

Use a broad spatula to move cut-outs without stretching the outline.

Protect narrow parts

Choose a flared base and broad handle; very thin projections can brown too early.

Dry before gifting

Pack only when icing no longer feels tacky, separating layers with parchment.
