Sugar Cookie Sandwiches

A little butter. A little frosting magic.

Small vanilla sugar-cookie sandwiches with a visible buttercream layer between two tender, lightly crisp rounds.

The important detail in this recipe is the way the dough is shaped and finished. Cut 48 small 2-inch rounds from ¼-inch chilled dough. Space 1½ inches apart and pair similarly sized cookies after cooling. Each pair makes one sandwich.

Before mixing, measure the flour without packing it and prepare the pans. Warm cookies melt buttercream. Cool both halves fully, use about 2 teaspoons of filling per sandwich, and press gently rather than squeezing the filling to the edge.

Watch the first tray closely near the end of the baking range. Let the cookies cool completely before finishing: Beat filling butter smooth, add confectioners’ sugar, then milk and vanilla, and whip creamy. Divide between 24 cookie bottoms, about 2 teaspoons each, and cover with the matching tops. Let the filling settle before packing.

Instructions

Mixing

  1. Make the doughBeat cool-soft butter with sugar until smooth, about 1 minute. Mix in the egg or yolk and vanilla, scraping the bowl. Whisk the flour, salt and any leavener separately; add on low speed just until the dough comes together.

Thermal management

  1. Manage the doughRoll the freshly mixed dough between lightly floured parchment sheets to ¼ inch thick, cover and refrigerate until firm for the stated chilling time. Keep the second slab refrigerated while cutting the first.

Shaping

Chef’s Science & Pro Tips

Cool before filling

Warm cookies melt buttercream. Cool both halves fully, use about 2 teaspoons of filling per sandwich, and press gently rather than squeezing the filling to the edge.

Keep the portion consistent

Cut 48 small 2-inch rounds from ¼-inch chilled dough. Space 1½ inches apart and pair similarly sized cookies after cooling. Each pair makes one sandwich. Different thicknesses need different baking times; bake comparable pieces together.

Use the finish as your cue

Look for a set surface and lightly colored edges rather than a dark golden top. Overbaking dries the center; let the cookies finish setting on the pan.

  • Use the gram weights for the most consistent dough. Small leavener weights are approximate; measure teaspoons carefully. Egg weights exclude shells. Oven temperatures refer to a conventional oven.
