Pistachio Rose Sugar Cookies

A little butter. A little frosting magic.

Rose-water sugar cookies with a white-chocolate face, chopped green pistachios and edible pink rose petals.

The feature to preserve is the shaping: Roll chilled dough ¼ inch thick using a very light dusting of flour. Cut 3-inch flowers or trees and place 2 inches apart on parchment; keep scraps cool.

Before mixing, measure without packing the flour. Use rose water sold for food, never perfume or essential oil. The measured tablespoon is for culinary rose water, which is much less concentrated than an extract. Only food-grade edible petals belong on the finish.

Use the observable baking cues as well as the timer. Melt white chocolate gently, stirring frequently. Dip the face of each fully cooled cookie and let excess drip off. Sprinkle one side with chopped pistachios and a few rose petals while wet. Refrigerate about 20 minutes to set, then return to room temperature sealed.
