Linzer Sugar Cookies

A little butter. A little frosting magic.

Almond-spiced sugar-cookie sandwiches with raspberry-jam windows and a fine snowy sugar dusting.

The feature to preserve is the shaping: Roll chilled dough ¼ inch thick and cut 64 two-inch scalloped rounds. Cut a 1-inch center from half. Bake solid bases and window tops on separate trays, 2 inches apart; window tops bake about 1 minute faster.

Before mixing, measure without packing the flour. Dust only the window tops before placing them on the jam-covered bases. Dusting assembled cookies coats the jam as well. Jam softens the crumb over time; fill close to serving for more contrast.

Use the observable baking cues as well as the timer. Dust cooled window tops lightly with confectioners’ sugar. Spread about ½ teaspoon raspberry jam on each solid base, then gently sandwich with a window top.

Instructions

Mixing

  1. Make the doughPulse almonds with brown sugar to fine crumbs, not paste. Whisk flour, powder, cinnamon and salt. Cream butter with granulated sugar, beat in egg and vanilla, then mix in the flour and nut mixtures.

Thermal management

  1. Prepare for shapingCover and refrigerate for 180 minutes until firm but workable. Keep unused dough cool between batches.

Shaping

  1. Shape the batchRoll chilled dough ¼ inch thick and cut 64 two-inch scalloped rounds. Cut a 1-inch center from half. Bake solid bases and window tops on separate trays, 2 inches apart; window tops bake about 1 minute faster.

Baking

  1. Bake to the right textureHeat a conventional oven to 350°F (177°C). Bake on the center rack for 10–11 minutes, until the edges are set and the centers have lost their wet shine. Keep the tops lightly colored. Use cool pans for later trays.

Cooling

  1. Cool before servingRest on the pan 5 minutes, then move carefully to a rack. Allow 25 minutes total cooling, including pan rest; the crumb firms as it cools.

Finishing

Storage & Make-Ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperatureUp to 3 daysKeep filled sandwiches sealed at room temperature. Jam gradually softens them; fill closer to serving for a crisper edge.
RefrigerationRaw dough: up to 2 daysCover raw dough tightly. Refrigerating plain baked cookies is unnecessary and can dry them; let chilled dough become workable before shaping.
Freeze rawUp to 2 monthsFreeze cut shapes flat, then bag airtight. Bake from frozen, allowing extra time and checking the center.
Freeze bakedUp to 2 monthsFreeze unfilled cookie halves airtight up to 2 months; thaw and assemble with fresh jam.
Restore30–60 minutesThaw baked cookies in their closed container at room temperature. For a freshly warmed plain cookie, use a 300°F oven for 2–3 minutes; cool briefly before serving.

Notes

  • US measures are shown first; gram weights help avoid packed flour. Spice weights are approximate: use measuring spoons for small quantities. Egg weights exclude shells. Temperatures are for a conventional oven. Yield is 32 finished sandwiches, made from 64 cookie halves. The batch estimate allows six sandwiches’ worth, or twelve halves, per tray.

Nutrition

Approximate nutrition per serving calculated from ingredient weights divided by 32; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.
