Biscoff-Stuffed Sugar Cookies

A little butter. A little frosting magic.

Soft vanilla sugar cookies with a cinnamon cookie-butter pocket inside.

The feature to preserve is the shaping: Enclose one frozen teaspoon of cookie butter in each of eighteen equal dough portions. Pinch seams completely shut and roll in optional sugar. Place 3 inches apart.

Before mixing, measure without packing the flour. This is a stuffed cookie. Freeze small teaspoons of cookie butter and seal each inside dough; stirring the spread into the dough changes its fat balance.

Use the observable baking cues as well as the timer. Allow the crumb to cool before packing; the texture continues to settle after the tray leaves the oven.

Storage & Make-Ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperature3–4 daysCool completely and seal in an airtight container. Keep unfrosted cookies separate from moist or strongly flavored treats.
RefrigerationRaw dough: up to 2 daysCover raw dough tightly. Refrigerating plain baked cookies is unnecessary and can dry them; let chilled dough become workable before shaping.
Freeze rawUp to 2 monthsFreeze portioned dough balls on a tray, then seal in a freezer bag. Bake from frozen, allowing extra time and checking for a set center.
Freeze bakedUp to 2 monthsFreeze fully cooled, plain cookies in a sealed container with parchment between layers.
Restore30–60 minutesThaw baked cookies in their closed container at room temperature. For a freshly warmed plain cookie, use a 300°F oven for 2–3 minutes; cool briefly before serving.
