Instructions
Make the shortcrust
- 1Make the shortcrustRub flour and cold butter into fine crumbs. Mix in sugar and salt, then egg and vanilla. Bring together briefly into a disk, wrap and refrigerate 1 hour.
Cook and cool the fig filling
- 2Cook and cool the fig fillingCombine chopped dried figs, 80 g water and honey in a small saucepan. Cover and simmer gently for 6–8 minutes, stirring occasionally, until the figs soften and little free liquid remains. This stove work is included in active time. Mash or pulse to a thick paste, then mix in almond flour, zest and cinnamon. Spread in a shallow bowl and cool 20 minutes before filling.
Fill square pockets
- 3Fill square pocketsHeat oven to 350°F (177°C) conventional or 325°F (163°C) fan. Roll pastry between parchment to 1/8 inch thick. Cut 40 squares about 2 1/4 inches wide, rerolling scraps briefly. Divide the cooled filling into 20 portions of approximately 17 g, allowing for water evaporation. Place a portion in the center of each base and top with a second square. Press out trapped air and seal all four sides with fork tines. Make one small diagonal slit through each top.
Bake and cool
- 4Bake and coolPlace 10 pockets on each of two lined 13 × 18-inch sheets, 1 1/2 inches apart. Bake one sheet at a time 21–25 minutes, 50 minutes for both, until the edges and bases are golden and the top crust is dry. Rest 10 minutes on sheets, then cool 15 minutes on a rack. The 45-minute cooling allocation includes the filling's separate 20-minute cooling stage.
Chef’s Science & Pro Tips
Ingredient science
Use dried figs rather than fresh fruit or jam; the concentrated paste gives a firm filling with visible seeds.
Technique & texture
Keep the filling clear of the sealing border to prevent leaks.
Finishing & serving
Thin evenly rolled dough lets two pastry layers bake without a thick raw seam.
Storage and make-ahead
| Method | How long | What to do |
|---|---|---|
| Room temperature | Up to 1 day | Keep fully cooled pockets airtight in a cool room. |
| Refrigeration | Up to 3 days | Refrigerate airtight because the cooked fig filling retains moisture. |
| Raw freezing | Up to 1 month for dough only | Freeze the plain wrapped pastry disk; make the filling fresh after thawing. |
| Baked freezing | Up to 1 month | Freeze cooled filled pockets airtight with parchment between layers. |
| Restoring | Overnight | Thaw covered in the refrigerator; bring serving portions to room temperature. |
Notes
- Use dried figs rather than fresh fruit or jam; the concentrated paste gives a firm filling with visible seeds. Keep the filling clear of the sealing border to prevent leaks. Thin evenly rolled dough lets two pastry layers bake without a thick raw seam. This home formula has not been kitchen-tested.
Nutrition
Approximate nutrition per serving calculated from ingredient weights divided by 20; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.

Frequently Asked Questions
Are these cuccidati or petrali?
No. These sealed square home pockets use a simpler fig-almond paste and make no claim to either regional identity.
Can I replace dried figs with fresh figs by weight?
No. Fresh figs add much more water and require a separately balanced cooked filling.
Why do I need a slit?
The small vent releases steam from the enclosed filling while the fork-sealed edges hold it in place.
