Instructions

Disperse the espresso

  1. 1Disperse the espressoStir espresso powder with the measured room-temperature water and vanilla to make a thick concentrate. Whisk this into the whites with salt until foamy. Stir almond flour and granulated sugar together, then work in the coffee whites with a spatula.

Form domes

  1. 2Form domesHeat the oven to 325°F (163°C) conventional or 300°F (149°C) fan. Divide paste into 24 portions of about 19 g, roll in powdered sugar and place 12 per parchment-lined 13 × 18-inch sheet, 2 inches between centers. Keep the balls domed.

Bake separately

  1. 3Bake separatelyBake one sheet on the middle rack for 20–22 minutes, then the second for the same time, allowing 44 minutes in total. The sugar should split into cracks and the sides feel set without a hard, dry center.

Cool gently

Frequently Asked Questions

Can I use brewed espresso?

A shot adds too much water. Use the specified instant powder and small amount of water.

Can I make a decaf version?

Use the same weight of decaffeinated instant espresso powder.

Does coffee replace almond flour?

No. The almond flour supplies the structure; coffee is an added flavoring.
