Ingredients

Instructions
Make coarse crumbs
- 1Make coarse crumbsCombine flour, fine cornmeal, almond flour, chopped almonds, 85 g sugar and salt. Rub in cool butter, keeping coarse crumbs rather than a smooth paste. Toss in yolks, vanilla and zest with a fork until the mixture forms clumps when squeezed.
Portion the clusters
- 2Portion the clustersDivide into 24 portions, about 23 g each. On two lined 13 × 18-inch sheets gather each portion into a rough 2-inch disk about 3/8 inch thick, lightly pinching enough to hold together without smoothing. Top each with one whole almond and distribute the reserved 15 g sugar over all tops. Chill 20 minutes.
Bake until golden
- 3Bake until goldenHeat oven to 350°F (177°C) conventional or 325°F (163°C) fan. Bake one sheet at a time 16–20 minutes, 40 minutes for both. Tops, edges and almond pieces should be golden; the middle must look dry.
Cool without breaking
- 4Cool without breakingRest on sheets 15 minutes so the crumbly disks strengthen. Lift with a wide thin spatula and cool another 25 minutes on a rack. Expect small loose crumbs; handle as delicate clusters.
Chef’s Science & Pro Tips
Ingredient science
Fine cornmeal avoids an unpleasant gritty bite.
Technique & texture
The intentionally rough, barely joined crumbs echo sbrisolona; kneading into smooth dough loses that texture.
Finishing & serving
Use a whole almond on every portion so the image and ingredient allocation match.
Storage and make-ahead
| Method | How long | What to do |
|---|---|---|
| Room temperature | Up to 5 days | Store cold bites in a rigid airtight tin so crumbs are not crushed. |
| Refrigeration | Not needed | Keep the baked dry clusters in a cool cupboard. |
| Raw freezing | Up to 1 month | Freeze shaped unbaked clusters, then thaw covered in the refrigerator. |
| Baked freezing | Up to 1 month | Separate cold bites with parchment in a rigid freezer box. |
| Restoring | About 1 hour | Thaw in the closed box, then lift gently with a spatula. |
Notes
- Fine cornmeal avoids an unpleasant gritty bite. The intentionally rough, barely joined crumbs echo sbrisolona; kneading into smooth dough loses that texture. Use a whole almond on every portion so the image and ingredient allocation match. This home formula has not been kitchen-tested.
Nutrition
Approximate nutrition per serving calculated from ingredient weights divided by 24; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.

Frequently Asked Questions
Is sbrisolona traditionally a small cookie?
The Mantuan original is a larger crumbly cake broken into pieces; these are an explicitly adapted cookie-sized format.
Why do my bites fall apart hot?
Butter and yolks need to set during cooling. Give them the full 15-minute tray rest.
Can I use coarse polenta?
Use fine cornmeal here. Coarse polenta does not soften enough in this short bake.
