Dark chocolate gingerbread-spiced cookies topped with softened marshmallow halves and thin chocolate drizzles for a clear hot-cocoa finish.
Melted semisweet chocolate provides structure; cocoa alone is not an equivalent substitute.
These are chocolate cookies flavored with gingerbread spices, not cocoa-mix cookies. The marshmallow is added near the end of baking so it softens instead of disappearing into the dough. Extra chocolate setting time in a warm kitchen is additional.

Instructions
Mix
- Melt and cool chocolateMelt the 8 oz chocolate gently in short microwave bursts, stirring often. Let cool to lukewarm. Whisk flour, cocoa, baking powder, salt and spices.
- Beat the doughBeat butter and both sugars until creamy, about 3 minutes. Beat in eggs and vanilla for 2 minutes, scrape the bowl and beat 1 minute more. Mix in lukewarm melted chocolate, then dry ingredients on low. Fold in chocolate chips.
Chill
- Firm brieflyRefrigerate 20 minutes, just until scoopable. Heat to 350°F (175°C) conventional, or 325°F fan. A longer chill makes thicker cookies and may require extra softening time.
Shape
- Scoop evenlyMake 24 portions of about 35 g, roughly 1 1/2 tablespoons each. Place on lined pans, 3 inches apart.
Bake
- Add the marshmallow lateBake 10–12 minutes until the edges are set and the surface is no longer wet batter. Press a marshmallow half cut-side down onto each top, then return to the oven 1–2 minutes until soft and puffed. Do not broil; watch the first tray carefully.
Cool
- Drizzle chocolateRest 5 minutes on the pan, then cool on a rack about 15 minutes. Melt the remaining 2 oz chocolate gently and drizzle thin lines over the marshmallow. Let set about 20 minutes in a cool room before packing.
Chef’s Science & Pro Tips
Use baking chocolate
Melted semisweet chocolate provides structure; cocoa alone is not an equivalent substitute.
Add marshmallow late
A full bake with the marshmallow on top can melt it away. Give it only the last 1–2 minutes.
Pack without stacking
Marshmallow tops can remain tacky. Use a single layer or firm dividers.
Storage & Make-Ahead
| Method | How long | What to do |
|---|---|---|
| Room temperature | Up to 3 days | Store airtight in one layer so marshmallow tops do not stick together. |
| Refrigeration | Raw dough: up to 2 days | Wrap dough tightly. Plain baked cookies do not need refrigeration. |
| Raw freezing | Up to 2 months | Freeze portions airtight; thaw covered in the refrigerator before baking. |
| Cooked freezing | Up to 2 months | Freeze the baked plain cookies without marshmallow or drizzle; thaw and add the topping with a brief oven warm-up. |
| Restoration | Before serving | Serve at room temperature; avoid reheating finished cookies because marshmallow melts quickly. |
Notes
- These are chocolate cookies flavored with gingerbread spices, not cocoa-mix cookies. The marshmallow is added near the end of baking so it softens instead of disappearing into the dough. Extra chocolate setting time in a warm kitchen is additional.

No. Hot chocolate mix contains sugar and sometimes milk powder; use unsweetened cocoa.
When do I add the marshmallow?
During the final 1–2 minutes, after the cookie edges have set.
Do these contain molasses?
No. Their gingerbread flavor comes from ginger, cinnamon and cloves in a chocolate cookie dough.
