High-Altitude Gingerbread Cookies

A little spice. A little Christmas magic.

Buttery high-altitude gingerbread cut-outs made with cold butter, warm spices and a little molasses, without chemical leavening.

There is no missing soda or powder; the absence of chemical leavening limits puffing.

This egg-free dough is formulated around 5,280 feet elevation, with cold butter and no baking soda or powder. It is a lighter buttery gingerbread with doubled spices and molasses for fuller flavor. Higher elevations and ovens differ; start with a small tray rather than assuming universal altitude adjustments.

  1. Cut cold butter into flourPulse flour, both sugars, salt and spices in a food processor. Add cold butter gradually and pulse until evenly distributed in fine moist crumbs.
  2. Bring dough togetherAdd vanilla, milk and molasses. Pulse until dough clumps, then gather gently by hand without extensive kneading.

Chill

  1. Cool disk and shapesWrap a flattened disk and chill 20 minutes. Roll 1/4 inch thick and cut about 36 shapes with a 3-inch cutter. Set on lined pans 2 inches apart. Refrigerate shaped cookies 1 hour to help hold outlines.

Bake

  1. Bake at mountain altitudeHeat to 350°F (175°C) conventional or 325°F (165°C) fan. Bake one tray at a time for 11–12 minutes until tops set and edges turn lightly golden. Do not wait for dark browning.

Chef’s Science & Pro Tips

Do not add leavener

There is no missing soda or powder; the absence of chemical leavening limits puffing.

Chill cut shapes

A full hour after cutting firms butter and protects outlines.

Keep the bake pale

Set tops and lightly golden edges are the target; darkening dries this buttery dough.
