Gingerbread Swirl Cookies

A little spice. A little Christmas magic.

Chocolate and gingerbread swirl cookies with a bold two-color marbled pattern in tidy rectangular slice-and-bake cookies.

Big alternating pieces leave a readable two-color pattern; excessive kneading blends them into one color.

Two separately mixed doughs create broad chocolate and gingerbread swirls. Replace 20 g of the chocolate-layer flour with cocoa, as listed, rather than adding liquid chocolate to finished dough. This is a marbled rectangular slice, distinct from a rolled pinwheel. Block dimensions and yield are approximate; keep slices 1/3 inch thick.

Ingredients

Scale

Scale ingredients and US equivalents, including eggs. Keep cookie size, thickness, oven temperature and baking time per tray unchanged. More trays add time; weigh beaten egg for fractional batches.

Instructions

Mix

  1. Make the spiced doughCream gingerbread-layer butter, brown sugar and molasses. Mix in its egg yolk. Whisk that layer flour, spices, soda and salt, then combine with the butter mixture just until dough forms.
  2. Make the chocolate doughCream chocolate-layer butter and sugar. Add its beaten half egg and vanilla. Whisk that layer flour, cocoa, soda and salt, then mix in just until combined. Weigh 25 g of beaten egg for the half egg.

Chill

  1. Firm both doughsWrap doughs separately and chill 1 hour. They should be cool but pliable enough to press together.

Shape

  1. Create a loose marbleTear each dough into large walnut-sized pieces and arrange alternate colors on parchment. Press into a compact block about 10 × 3 × 1 inches. Fold the block once and press back to these dimensions, without kneading colors together. Wrap and freeze 30 minutes until sliceable.

Bake

  1. Slice the contrasting patternHeat to 325°F (165°C) conventional or 300°F (150°C) fan. Cut about 30 slices, each 1/3 inch thick. Space 1 inch apart on lined pans. Bake 14–16 minutes until edges set and the pale parts turn lightly golden.

Cool

  1. Keep the pattern clearRest 5 minutes on the pan, then 15 minutes on a rack. No icing is needed; the two doughs create a wavy marbled pattern rather than a rolled pinwheel.

Chef’s Science & Pro Tips

Keep pieces large

Big alternating pieces leave a readable two-color pattern; excessive kneading blends them into one color.

Weigh the half egg

Beat a whole egg and use 25 g without shell for the chocolate layer.

Cut a firm block

The brief freezer rest makes straight slices easier and prevents smearing.

Frequently Asked Questions

A few helpful answers before you bake.

Are these rolled pinwheels?

No. Large pieces of two doughs are pressed into a marbled rectangular block.

Why did the colors disappear?

The doughs were kneaded together too much. Fold only once and retain broad patches.

How do I measure half an egg?

Beat one large egg and weigh 25 g for the chocolate layer.
