Gingerbread Brownie Cookies

A little spice. A little Christmas magic.

Fudgy gingerbread-spiced brownie cookies with dark chocolate centers and glossy papery cracks, without icing or powdered sugar.

Hot chocolate can melt the creamed butter and leave a loose dough.

These are chocolate brownie cookies flavored with gingerbread spices, without molasses. Use real baking chocolate bars rather than replacing all the melted chocolate with cocoa powder. The chocolate melt-and-cool stage overlaps preparation, so it is not counted again as extra waiting. No chocolate chips or icing are needed for the glossy cracked finish.

Instructions

Melt

  1. Cool the chocolateMelt chopped chocolate gently over barely simmering water or in short microwave bursts, stirring often. Keep water out of the bowl. Let stand about 10 minutes while measuring and mixing the other ingredients; it should remain fluid but no longer hot.

Mix

  1. Aerate the eggs and sugarWhisk flour, cocoa, baking powder, salt and spices. Beat softened butter with both sugars 2–3 minutes. Beat in eggs and vanilla for 2 minutes, scraping the bowl. Mix in the cooled melted chocolate, then the dry mixture just until combined.

Chill

  1. Thicken brieflyCover and refrigerate 20 minutes so the brownie-like dough becomes scoopable. Heat to 350°F (175°C) conventional or 325°F (165°C) fan and line pans.

Portion

  1. Leave spreading roomScoop about 22 portions of 33 g, roughly 1 1/2 tablespoons each. Space 3 inches apart, up to 11 cookies per pan. Do not flatten.

Bake

  1. Look for papery cracksBake 12–13 minutes until tops are crackled and edges set. Centers remain soft; do not wait for a hard middle. Bake the next tray on a cool pan.

Cool

  1. Protect the fudgy centerRest 5 minutes on the baking sheet, then move gently to a rack for about 15 minutes. Chocolate firms as the cookies cool.

Chef’s Science & Pro Tips

Cool melted chocolate

Hot chocolate can melt the creamed butter and leave a loose dough.

Give eggs time

Beating eggs with the butter-sugar mixture helps create the delicate brownie-like top.

Stop with soft centers

Chocolate continues to set after baking; fully firm hot cookies lose their fudgy interior.

Frequently Asked Questions

A few helpful answers before you bake.

Do these contain molasses?

No. They are brownie cookies with ginger, cinnamon and cloves.

Can I replace chocolate bars with cocoa?

No. Melted chocolate supplies cocoa butter, sugar and structure that cocoa powder alone does not.

Why does the dough need only 20 minutes of chilling?

The brief chill makes the melted-chocolate dough scoopable. A much longer chill can make it too firm to portion.
