Gingerbread Brookies

A little spice. A little Christmas magic.

Layered gingerbread brookie bars with a dark fudgy brownie base and a soft ginger-molasses cookie top, sliced to show both layers.

Small spoonfuls cover the brownie base with less dragging and preserve the two layers.

These are layered brownie-and-cookie bars rather than round cookies. The 9 × 13-inch pan gives two fairly thin layers; an 8-inch square pan makes them much deeper and changes the baking time. Cinnamon complements the ginger in the upper layer. The plain finish has no sanding sugar or icing. Whole wheat flour belongs only in the gingerbread layer.

Instructions

Prepare

  1. Line the panHeat to 350°F (175°C) conventional or 325°F (165°C) fan. Lightly grease a 9 × 13-inch metal pan and line with a parchment sling. No dough chilling is required.

Brownie base

  1. Whisk the chocolate batterWhisk cooled melted butter with sugar, eggs and vanilla until evenly blended. Sift in cocoa, flour, salt and baking powder and stir just until combined. Spread evenly in the lined pan.

Gingerbread top

  1. Mix the spiced layerBeat softened butter and brown sugar about 1–2 minutes until creamy. Mix in molasses, egg and vanilla. Whisk both flours, ginger, cinnamon, baking powder, soda and salt, then mix in just until no dry streaks remain.

Layer

  1. Keep the colors separateDrop small spoonfuls of gingerbread mixture across the brownie batter. Join them gently with an offset spatula into an even upper layer. Do not press deeply or stir the two batters together.

Bake

  1. Check the centerBake 30–35 minutes until the top is set and a toothpick inserted into the center has moist crumbs without liquid batter. Check at 30 minutes; pan material and oven differences can add time.

Cool and cut

  1. Expose the two layersCool in the pan on a rack about 90 minutes until fully cool. Lift with the sling and cut into 16 bars, wiping the knife between cuts. Cutting warm can smear the brownie layer.

Chef’s Science & Pro Tips

Dollop before spreading

Small spoonfuls cover the brownie base with less dragging and preserve the two layers.

Keep the stated pan

A smaller pan can leave the brownie center wet before the upper layer finishes.

Cut completely cold

A cooled slab gives cleaner dark-and-light cross sections than warm bars.

RefrigerationBaked bars: up to 1 weekRefrigeration is optional; keep airtight and allow bars to soften before serving.
Raw freezingNot recommendedFor predictable layer structure, bake freshly mixed batters and freeze the finished bars instead.
Cooked freezingUp to 2 monthsWrap cooled bars individually, then freeze airtight. Thaw covered at room temperature.

Frequently Asked Questions

A few helpful answers before you bake.

Are brookies bars or cookies here?

This version is baked as two layers in a 9 × 13-inch pan and cut into 16 bars.

Can I use an 8-inch square pan?

Use the stated pan. A smaller pan changes layer depth and requires a different baking time.

Why did the layers blend?

The upper dough may have been pressed into the brownie batter. Add small dollops and spread them lightly.
