Snowman Sugar Cookies

A little butter. A little frosting magic.

Three-size sugar-cookie snowmen assembled from overlapping white-iced rounds, with tiny faces and colored scarves.

The feature to preserve is the shaping: Cut eight each of 3-inch, 2¼-inch and 1½-inch circles, for eight snowman sets. Bake each diameter on a separate tray; small tops may finish before the large bases.

Before mixing, measure without packing the flour. Small circles bake faster. Keep each size on its own tray and check small pieces a few minutes early. Stack only after every cookie and its icing are dry.

Decorate and assemble only after the pieces are fully cooled. Beat icing sugar, meringue powder and water until thick, keeping it covered. Thin a small portion for flooding. Flood the circles white and let dry flat at least 3 hours. Arrange each large, middle and small circle flat in a vertical snowman silhouette, overlapping adjacent edges about ¼ inch. Join overlaps with thick icing dots. Pipe eyes, buttons, an orange nose and a colored scarf. Let the assembled snowmen firm flat for another 2 hours before moving; serve flat on their platter. The 5-hour set allowance includes both stages.

Scale

Scale ingredients and US equivalents, including eggs; weigh beaten egg for fractional batches. Keep piece size, thickness, oven temperature and baking time per tray unchanged. Extra trays increase whole-batch time.

Instructions

Mixing

  1. Make the doughBeat cool-soft butter with sugar until smooth, about 1 minute. Mix in the egg or yolk and vanilla, scraping the bowl. Whisk the flour, salt and any leavener separately; add on low speed just until the dough comes together.

Thermal management

  1. Prepare for shapingRoll the freshly mixed dough between lightly floured parchment sheets to ¼ inch thick, cover and refrigerate until firm for the stated chilling time. Keep the second slab refrigerated while cutting the first.

Shaping

  1. Shape the batchCut eight each of 3-inch, 2¼-inch and 1½-inch circles, for eight snowman sets. Bake each diameter on a separate tray; small tops may finish before the large bases.

Baking

  1. Bake to the right texturePreheat to 350°F (175°C). Bake on the center rack for 9–12 minutes. Edges should be set and only lightly colored; centers must lose their wet sheen. Use cool pans for subsequent trays.

Cooling

  1. Cool before servingRest on the baking sheet for 5 minutes, then move to a rack. Allow about 20 minutes total cooling before storing; the center firms as steam escapes.

Finishing

  1. Add the finishBeat icing sugar, meringue powder and water until thick, keeping it covered. Thin a small portion for flooding. Flood the circles white and let dry flat at least 3 hours. Arrange each large, middle and small circle flat in a vertical snowman silhouette, overlapping adjacent edges about ¼ inch. Join overlaps with thick icing dots. Chef’s Science & Pro Tips

Bake sizes separately

Bake each circle size separately and check small tops early. Assemble on parchment, support overlapping joints and keep the finished snowmen flat while the icing glue firms.

Shape with purpose

Cut eight each of 3-inch, 2¼-inch and 1½-inch circles, for eight snowman sets. Bake each diameter on a separate tray; small tops may finish before the large bases. Bake similar-sized pieces together.

Storage & Make-Ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperature3–4 daysDry the icing completely before stacking with parchment. Store airtight at room temperature for 3–4 days.
RefrigerationRaw dough: up to 2 daysCover raw dough tightly. Refrigerating plain baked cookies is unnecessary and can dry them; let chilled dough become workable before shaping.
Freeze rawUp to 2 monthsFreeze cut shapes flat, then seal in a freezer bag. Bake from frozen, checking near the usual window and allowing extra time if needed.
Freeze bakedUp to 2 monthsFreeze fully cooled, plain cookies in a sealed container with parchment between layers.
Restore30–60 minutesThaw iced cookies in a closed container so condensation collects on the container rather than the icing. Do not warm royal icing in the oven.

Notes

  • US measures are shown first; gram weights help avoid packed flour. Spice weights are approximate: use measuring spoons for small quantities. Egg weights exclude shells. Temperatures are for a conventional oven. Use food-safe gel colors in tiny optional amounts. Keep piping icing covered so it does not crust. For intricate pieces, allow extra decorating time.

Nutrition

Approximate nutrition per serving calculated from ingredient weights divided by 8; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.

Frequently Asked Questions

A few helpful answers before you bake.

Why are my snowman tops overbaked?

Small circles bake faster. Keep each size on its own tray and check small pieces a few minutes early. Stack only after every cookie and its icing are dry.

Can I stand these snowmen upright?

This version is assembled and served flat. For a photographed upright display, support each snowman against a clean serving prop; do not expect the overlapping cookies to stand freely. Move only after the joints are fully dry.

Can I make snowman sugar cookies ahead?

Prepare with the storage instructions below. Complete the required finish after the base has cooled. Beat icing sugar, meringue powder and measured water until smooth and thick, about 2 minutes. Keep covered. Reserve a thick piping portion; thin a separate small portion with water drops until a drizzle settles in 5–10 seconds. Flood the circles white and let dry. Stack one large, one middle and one small cookie with a dot of thick icing between them. Pipe dark eyes and buttons, a little orange nose and a colored scarf. Let the joints firm before moving.
