Ornament Sugar Cookies

A little butter. A little frosting magic.

Round vanilla cookie baubles with colorful icing bands and a little edible cap.

The feature to preserve is the shaping: Cut 3-inch ornament shapes with a broad cap. If making a display hole, cut it before baking with a ¼-inch straw; keep it away from the rim.

Before mixing, measure without packing the flour. Baked cookies can crack when drilled. Cut any display hole in the dough first and check it after baking while the cookie is warm. The cap is delicate, so handle from the round body.

Use the observable baking cues as well as the timer. Beat icing sugar, meringue powder and measured water until smooth and thick, about 2 minutes. Keep covered. Reserve a thick piping portion; thin a separate small portion with water drops until a drizzle settles in 5–10 seconds. Flood the baubles in pale pink, blue or green. Once crusted, pipe contrasting bands and small dots. Ice the cap gold-yellow or white; use only food-safe edible decoration. Let dry flat at least 3 hours before stacking; thick flooding and humid rooms may need overnight. Total time includes 3 hours of drying; any additional overnight wait extends it.

Instructions

Mixing

  1. Make the doughBeat cool-soft butter with sugar until smooth, about 1 minute. Mix in the egg or yolk and vanilla, scraping the bowl. Whisk the flour, salt and any leavener separately; add on low speed just until the dough comes together.

Thermal management

  1. Prepare for shapingRoll the freshly mixed dough between lightly floured parchment sheets to ¼ inch thick, cover and refrigerate until firm for the stated chilling time. Keep the second slab refrigerated while cutting the first.

Shaping

  1. Shape the batchCut 3-inch ornament shapes with a broad cap. If making a display hole, cut it before baking with a ¼-inch straw; keep it away from the rim.

Baking

  1. Bake to the right texturePreheat to 350°F (175°C). Bake on the center rack for 9–12 minutes. Edges should be set and only lightly colored; centers must lose their wet sheen. Use cool pans for subsequent trays.

Cooling

  1. Cool before servingRest on the baking sheet for 5 minutes, then move to a rack. Allow about 20 minutes total cooling before storing; the center firms as steam escapes.

Finishing

  1. Add the finishBeat icing sugar, meringue powder and measured water until smooth and thick, about 2 minutes. Keep covered. Reserve a thick piping portion; thin a separate small portion with water drops until a drizzle settles in 5–10 seconds. Flood the baubles in pale pink, blue or green. Storage & Make-Ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperature3–4 daysDry the icing completely before stacking with parchment. Store airtight at room temperature for 3–4 days.
RefrigerationRaw dough: up to 2 daysCover raw dough tightly. Refrigerating plain baked cookies is unnecessary and can dry them; let chilled dough become workable before shaping.
Freeze rawUp to 2 monthsFreeze cut shapes flat, then seal in a freezer bag. Bake from frozen, checking near the usual window and allowing extra time if needed.
Freeze bakedUp to 2 monthsFreeze fully cooled, plain cookies in a sealed container with parchment between layers.
Restore30–60 minutesThaw iced cookies in a closed container so condensation collects on the container rather than the icing. Do not warm royal icing in the oven.

Notes

  • US measures are shown first; gram weights help avoid packed flour. Spice weights are approximate: use measuring spoons for small quantities. Egg weights exclude shells. Temperatures are for a conventional oven. Use food-safe gel colors in tiny optional amounts. Keep piping icing covered so it does not crust. For intricate pieces, allow extra decorating time.

Nutrition

Approximate nutrition per serving calculated from ingredient weights divided by 24; required fillings and toppings included, optional decorations excluded. Brands, unused coating and actual serving size affect the estimate.
