Ingredients

Optional sprinkles are for decoration and are not included in the nutrition estimate. Spice weights are approximate.

Instructions

Mix the spiced cocoa dough

  1. 1Mix the spiced cocoa doughWhisk flour, almond flour, dough cocoa, baking powder, cinnamon, cloves and salt. Beat butter and granulated sugar briefly until smooth. Mix in egg, milk and vanilla, then the dry mixture, stopping when a soft dough forms. Cover and chill 30 minutes.

Form small domes

  1. 2Form small domesHeat the oven to 350°F (177°C) conventional or 325°F (163°C) fan. Divide into 24 pieces of about 31 g. Roll into rough walnut-sized balls and flatten their bases slightly. Place 12 on each of two lined large sheets, 2 inches apart; do not flatten into disks.

Bake both batches

  1. 3Bake both batchesBake one sheet at a time for 19–22 minutes, allowing 44 minutes for both. The domes should be set throughout with dry surfaces and a springy center. Let each batch cool on its sheet for 10 minutes before coating.

Coat and oven-set

  1. 4Coat and oven-setSift powdered sugar with the coating cocoa and stir in the measured water. Roll the warm, not hot, cookies in a thin layer of glaze, allowing excess to drip back into the bowl. Return to parchment. Reduce the oven to 300°F (149°C) conventional or 275°F (135°C) fan. Put both sheets in together for 8–10 minutes to dry the egg-free coating, allowing 10 minutes. Total cooking is 54 minutes.

Cool the sugar shell

  1. 5Cool the sugar shellMove to racks and cool 35 minutes after the setting bake. The cooling allowance also includes the 10-minute pre-coating rest. The thin dark coating should become dry rather than remain like wet frosting; pack only once cold and dry.

Chef’s Science & Pro Tips

Ingredient science

This all-dark version represents tetù; the pale paired cookies are commonly called teio.

Technique & texture

Use a thin cocoa-sugar coating rather than melted chocolate to retain the correct finish.

Finishing & serving

The short second oven stage dries the egg-free glaze; it is not a substitute for baking the dough fully in the first stage.

Frequently Asked Questions

Do I need leftover cake and pastries?

No. Some bakery versions reuse pastry scraps; this explicitly adapted home formula starts with measured flour and almond flour.

Are half the cookies meant to be white?

This batch is 24 dark tetù. A paired tetù-and-teio assortment would require a separate pale dough and coating.

Is the coating melted chocolate?

No. It is powdered sugar, unsweetened cocoa and water, dried briefly in the oven.
