Ingredients

Optional sprinkles are for decoration and are not included in the nutrition estimate. Spice weights are approximate.

Instructions

  1. 1Combine

Heat oven to 325°F (165°C), or 300°F (150°C) fan. Mix almond flour and granulated sugar. Whisk egg whites and salt until foamy, then add almond extract. Fold into the almond mixture to form a sticky paste.

  2. 2Shape

Divide into 20 balls, about 23 g before coating. Roll in the measured powdered sugar and arrange 2 inches apart on a lined sheet.

  3. 3Bake

Bake 20–25 minutes until the coating cracks and the edges are lightly golden. Centers should remain soft, not liquid.

  4. 4Cool

Leave on the sheet for 10 minutes, then move to a rack for 20 minutes. The shell firms as the cookies cool.

Chef’s Science & Pro Tips

Use finely ground almond flour, not coarse meal, for an even crumb.

Technique & texture

Do not whip a stiff meringue; foam is sufficient to bind this paste.

Frequently asked questions

Are these flourless?

The formula contains almond flour rather than wheat flour. Check all ingredient labels if avoiding gluten.

Why did they spread?

Very coarse almonds or extra egg white can loosen the paste; weigh the whites.

Can I skip the sugar coating?

Yes, but the characteristic snowy cracks will be less visible.
