Instructions

Mix the pistachio dough

  1. 1Mix the pistachio doughStir butter and powdered sugar until creamy but not fluffy. Add vanilla and salt, then flour and ground pistachios. Press together gently. Use purchased finely ground nuts or pulse whole shelled nuts briefly with a little of the measured sugar, stopping before they become oily. Wrap and chill for 30 minutes.

Cut broad stars

  1. 2Cut broad starsRoll between parchment to 1/4 inch thick. Cut approximately 24 five-point stars with a broad 3 1/2-inch cutter, about 22 g each; cutter geometry affects yield. Gather scraps once. Place 12 per lined sheet with 1 inch between points, then chill for 15 minutes.

Bake two sheets

  1. 3Bake two sheetsHeat the oven to 325°F (163°C) conventional or 300°F (149°C) fan. Bake each sheet separately on the middle rack for 16–18 minutes, allowing 36 minutes total. Look for pale golden point tips and set centers; do not wait for deep brown edges.

Cool the fragile cookies

  1. 4Cool the fragile cookiesLeave each batch on its sheet for 10 minutes, then transfer carefully to a rack for another 20 minutes. Allow the full 30-minute cooling period after the last batch before packing.

Frequently Asked Questions

Will the cookies be bright green?

No. Ground pistachios give a natural muted beige-green tint and speckles; there is no food coloring.

Are these Sicilian pistachio pastries?

They are wheat-and-butter shortbread stars, not a claim to Sicilian almond-paste or pistachio pastries.

Why is my ground pistachio oily?

Long grinding releases nut oil. Pulse in short bursts with some measured sugar or use dry finely ground nuts.
