Ingredients

Instructions

Make and divide the dough

  1. 1Make and divide the doughRub butter into the 240 g base flour until crumbly. Stir in sugar and salt, then egg and vanilla; press together without kneading. Weigh and divide the base dough equally. Work 15 g additional flour into one half and 15 g cocoa into the other. Flatten, wrap separately and refrigerate for 30 minutes.

Build the spiral

  1. 2Build the spiralRoll each half between parchment into an 8 × 10-inch rectangle about 1/8 inch thick. Let the dough become pliable enough to bend. Brush the vanilla sheet very lightly with part of the measured water, lay cocoa on top, and gently press together. Brush the cocoa lightly with remaining water. Roll from a short edge into an 8-inch-long tight log, using parchment to support the dough.

Chill and slice

  1. 3Chill and sliceWrap the log and refrigerate for 60 minutes. Heat the oven to 350°F (177°C) conventional or 325°F (163°C) fan. Mark and cut 30 equal slices about 1/4 inch thick with a sharp knife. Arrange 15 per lined 13 × 18-inch sheet with 1 inch between edges; refrigerate the waiting sheet.

Bake and cool

  1. 4Bake and coolBake each sheet separately on the middle rack for 16–18 minutes, allowing 36 minutes for both. The vanilla edges should be lightly golden and the spirals set. Leave each batch on the sheet for 10 minutes, then cool on a rack for 20 minutes; allow 30 minutes after the final batch.

Chef’s Science & Pro Tips

Ingredient science

Equal cocoa and additional-flour weights keep the two halves close in consistency.

Technique & texture

Roll the layers while pliable, then chill the finished log for clean slicing.

Finishing & serving

Use only a thin film of the measured water to bind layers without making them slippery.

Frequently Asked Questions

Why does the dough split when I roll it?

It is probably too cold. Let the layered sheet soften a little before forming the log.

How do I stop the log becoming flat?

Turn the wrapped log a few times early in chilling, or cradle it in a folded towel in the refrigerator.

Can I freeze the spiral log?

Yes, for up to one month. Thaw in the refrigerator until a knife can slice it cleanly.
