Sugar Cookie Cheesecake Bars

A little butter. A little frosting magic.

Vanilla sugar-cookie bars with a baked cream-cheese cheesecake layer.

The feature to preserve is the shaping: Press cookie dough evenly into a parchment-lined 9-inch square metal pan. Bake the base briefly before spreading the cheesecake mixture over it.

Before mixing, measure without packing the flour. Warm cheesecake is soft. Cool the pan completely, refrigerate at least 2 hours and wipe the knife between cuts. A small center wobble can remain when the edges are set.

Use the observable baking cues as well as the timer. Cool the pan on a rack, then refrigerate at least 2 hours. Lift out with parchment and cut sixteen squares.
