Strawberry Sugar Cookie Bars

A little butter. A little frosting magic.

Vanilla sugar-cookie bars with naturally pink strawberry buttercream.

The feature to preserve is the shaping: Press the thick dough evenly into a lined 9-inch square metal pan. Level the corners and center; do not spread it into a larger pan.

Before mixing, measure without packing the flour. Berry powder gives stronger flavor without making the buttercream watery. Grind freeze-dried strawberries finely and sift out any stubborn pieces.

Use the observable baking cues as well as the timer. Beat frosting butter smooth. Add confectioners’ sugar and berry powder, then milk gradually, and beat creamy. Spread over cooled bars and cut sixteen squares.
