Neapolitan Sugar Cookie Bars

A little butter. A little frosting magic.

Three-layer sugar-cookie bars with a cocoa base, tender vanilla middle and naturally pink raspberry glaze.

The important detail in this recipe is the way the dough is shaped and finished. Layer chocolate dough below vanilla dough in an 8-inch square pan. Glaze the cooled slab with raspberry icing, let set, then cut into 24 small bars.

Before mixing, measure the flour without packing it and prepare the pans. Spread the bottom layer first. Add the vanilla dough in many small dollops, then gently join them with a damp spatula. Dragging one large mound across the pan pulls chocolate into the upper layer.

Watch the first tray closely near the end of the baking range. Let the cookies cool completely before finishing: Press raspberries through a fine sieve. Stir the juice with 1 cup of the glaze sugar, vanilla and the pinch of salt. Add the remaining ¼ cup gradually until thick but pourable; any unused sugar is excluded from the actual serving. Spread over the cooled slab, set 45 minutes, then cut a 6 × 4 grid.

Instructions

Mixing

  1. Make the doughBeat butter with both dough sugars until smooth, without whipping very fluffy. Mix in egg, extracts and sour cream. Whisk flour, baking soda and salt separately and add on low just until combined.

Thermal management

  1. Manage the doughNo chilling is needed. Heat the oven to 325°F and line an 8-inch square metal pan with a parchment sling. Divide the dough equally and mix cocoa into one half.

Shaping

  1. Shape evenlyPress chocolate dough evenly into the pan. Place small dollops of vanilla dough over it and gently spread into an even top layer with a damp offset spatula. Avoid blending the layers.

Baking

  1. Bake one tray at a timeBake on the center rack for 30–35 minutes, until the top is barely golden and a toothpick in the center comes out clean. A larger pan gives thinner bars and requires a different bake time.

Cooling

  1. Let the crumb setCool in the pan until safe to lift, then use the parchment sling to move the slab to a rack. Allow about 60 minutes total cooling before glazing.

Finishing

  1. Complete the cookiesPress raspberries through a fine sieve.

Chef’s Science & Pro Tips

Keep the layers separate

Spread the bottom layer first. Add the vanilla dough in many small dollops, then gently join them with a damp spatula. Dragging one large mound across the pan pulls chocolate into the upper layer.

Keep the portion consistent

Layer chocolate dough below vanilla dough in an 8-inch square pan. Glaze the cooled slab with raspberry icing, let set, then cut into 24 small bars. Different thicknesses need different baking times; bake comparable pieces together.

Cut after the glaze sets

Cool the slab completely, let the berry glaze firm for about 45 minutes, then cut a 6 × 4 grid with a sharp knife. Wipe the blade between cuts to keep the pink glaze off the vanilla and chocolate layers.

Storage & Make-Ahead

Keeping your cookies fresh
MethodHow longWhat to do
Room temperature3–4 daysLet the raspberry glaze set, then store bars airtight with parchment between layers for 3–4 days in a cool room.
RefrigerationRaw dough: up to 2 daysCover raw dough tightly. Refrigerating plain baked cookies is unnecessary and can dry them; let chilled dough become workable before shaping.
Freeze rawBake before freezingThis is a layered-pan dough: for a neater result, bake before freezing rather than freezing scooped raw portions.
Freeze bakedUp to 2 monthsFreeze the unglazed cooled slab or bars airtight for up to 2 months. Thaw sealed, then glaze and cut.
Restore30–60 minutesThaw glazed cookies in a closed container, then open once they reach room temperature. Do not oven-warm the glaze.

Notes

  • Use the gram weights for the most consistent dough. Small leavener weights are approximate; measure teaspoons carefully. Egg weights exclude shells. Oven temperatures refer to a conventional oven.

Nutrition

Approximate nutrition per serving calculated from ingredient weights divided by 24. Includes required fillings and toppings, excludes optional decoration and unused rolling flour. Brands and actual portion sizes change the estimate.
