Lemon Sugar Cookie Sandwiches

A little butter. A little frosting magic.

Small lemon-zest sugar cookies filled with bright lemon buttercream.

The feature to preserve is the shaping: Cut 48 small 2-inch rounds from ¼-inch chilled dough. Space 1½ inches apart and pair similarly sized cookies after cooling. Each pair makes one sandwich.

Before mixing, measure without packing the flour. Juice thins buttercream. Use the measured 2 tablespoons in place of milk, and add fine zest for stronger aroma without adding liquid.

Use the observable baking cues as well as the timer. Beat filling butter smooth, add confectioners’ sugar and lemon juice gradually, then beat thick. Pipe a small teaspoonful between each pair of fully cooled cookies.
